Stop single cream from curdling when cooking
Using single cream instead of double can make a creamy sauce healthier, but when added to a hot pan, it curdles and sends the sauce grainy. To prevent this from happening, heat the cream slowly in a heavy-based saucepan until it's just warm enough for steam to start appearing, but don't let it boil. Pour it into the rest of the food when warm and it will stay smooth.
